BREAD AND BUTTER ZUCCHINI
16 cups fresh zucchini, sliced
4 cups onions sliced thin
1/2 cup pickling salt
4 cups white vinegar
2 cups sugar
4 TBS mustard seed
2 TBS celery seed
2 tsp ground termeric
Cover zucchini and onion slices with one inch water and pickling
salt. Let stand 2 hours, then drain well. Combine remaining
ingredients and bring to a boil. Add zucchini and onions. Simmer 5
minutes then fill jars leaving 1/2 inch headspace. Process 10
minutes.
Makes 8-9 pints
