Free Pickle Recipe - Sweet Watermelon Rind Pickles

SWEET WATERMELON RIND PICKLES
2 lbs. rind (1 large melon)
1/4 cup salt
3 3/4 c. water
2 1/4 cups granualted sugar or superfine (I prefer superfine in
canning)
1 1/4 c. white wine vinegar
6 whole cloves
3 in cinnamon stick
Remove the dark green skin from melon rind leaving a thin layer, no
more than 1/8 in thick, of the pink fruit.
Cut rind into slices 2 x
1/4 in thick and put in a large bowl.
Dissolve salt in 2 1/2 cups of water. Pour over the rind, cover and leave 6 hours or overnight.
Drain rind and rinse under cold water.
Put in a pan, cover with
fresh
water. Bring to boil, lower heat and simmer for 10-15 minutes til
just tender. Drain well.
Put sugar, vinegar, and remaining water in a clean pan. Tie cloves
and cinnamon stick in cheesecloth and add to pan. Heat gently, stir
occassionally, til sugar is dissolved, then bring to the boil and
simmer for 10 minutes.
Turn off heat. Add rind, cover and let stand
for 2 hours.
Slowly bring mixture back to the boil, lower heat and simmer gently
for 20 minutes, or till rind has a translucent appearance.
Remove
and
discard spice bag. Place rind in hot sterile jars, pour over the
hot
syrup, tap the jar to release any trapped air, cover and seal.
This is a very old recipe that has won Reserve Champion at the fair before. If you like sweet tastes, you'll like this.
